Now that we are the middle of fall, I was inspired to experiment with new fall recipes for breakfast and healthy snacks.
It lead me to creating a healthy comfort food recipe. It may seem like an oxymoron, but you’ll see what I mean when you make these and try them:) Meet the cozy, fall gluten-free muffin:

A great addition to these muffins, especially if you are looking to add some fresh fruit + more fiber to your diet, are apple wedges sprinkled with cinnamon. My kids LOVE them as much as they love the muffins!
