Healthy Oatmeal Bars

Ingredients:

  • 1.5 cups of steel cut oats
  • ¼ cup of shredded almonds
  • ¼ cup of flax seed, chia seed and coconut seed mix, mixed with super seed and ancient grain blend from Trader Joe’s (sprouted buckwheat, sprouted millet, chia seed, golden flax seed, red quinoa, shelled hemp seed and amaranth) – or other seed mix you prefer!
  • ½ cup dried cranberries
  • ½ cup mixed berries of your choice (fresh); I use raspberries and blueberries
  • ¼ cup dark chocolate chips
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 egg
  • 1 ¼ cups of almond milk (or milk of your choice)

Instructions:

  • preheat oven to 350F
  • mix wet ingredients
  • add dry ingredients and mix
  • pour a thin layer of olive oil into a baking pan
  • pour all ingredients, well mixed, into the baking pan
  • bake for 40 minutes
  • cut to make bars as small or as large as you desire (ok maybe not as large as you desire J)
  • enjoy!
