Ingredients
- 1 package of filo pastry (I use The Fillo Factory organic all purpose fillo pastry sheets)
- 350g feta cheese (I use the 365 brand from Whole Foods)
- 3 eggs
- ½ cup of extra virgin olive oil
- ½ cup of filtered water
- A tablespoon or 2 Soy milk (optional)
Preheat oven to 375 F.
Mix 3 eggs. Add small pieces of feta cheese and mix well (may add soy milk or other milk of choice here).
Spread a thin amount of extra virgin olive oil on the baking pan (you may do this in a rectangular or circular pan). Place a thin pastry sheet in the baking pan. Put ½ table spoon of EVOO and ½ table spoon to a spoon of water (the goal is to get the sheets wet, but not too oily). Add the next pastry sheet, and put a small amount of the egg/cheese mixture. Continue to add pastry sheets, alternating the water/oil combination and egg/cheese mixture combination, until you have used up all the sheets. You will want to have your last sheet be with oil and water.
Place the baking pan in oven and bake until pita/burek is dark yellow/light brownish (usually 45 minutes to an hour).
