Proja is one of my favorite Serbian dishes. It is an ancient dish from my country that used to be made by farmers who were poor. Because of its low cost and accessibility of ingredients, this became one of the staples of Serbian and Balkan cuisine. Different parts of our region, and each family typically has their own variation. This is my mom’s recipe. It reminds me of my childhood and evenings with my mother, father and grandmother at home in Beograd before the war. It reminds me of childhood comfort, love and the importance of our family, and community.
Given the association between gluten and intestinal permeability and autoimmune conditions, and in an effort to significantly limit gluten burden in my own diet due to an autoimmune condition that I have, I created this gluten-free proja recipe. To my surprise, not only do I love it more than the original proja, but my son, who is a selective eater, devours it.
It is best enjoyed with tomatoes, or a salad of your choice. It can be eaten at breakfast, as a side dish with lunch or dinner. Of course, best enjoyed in moderation.
Note: if you are on an elimination diet, this is likely not a suitable recipe, as it does contain soy and corn. If you do not have to limit these foods, or any of the others in the recipe, I hope you enjoy it!
