Cauliflower Oatmeal

Cauliflower Oatmeal

Ingredients

  • 1 cup riced cauliflower 
  • ¾ cup unsweetened almond milk or plant based milk of choice 
  • 1-2 tablespoons flax meal or chia seeds 
  • 1 scoop protein powder of choice – I like this one: https://a.co/d/9jDf7qD 

Directions

  • Add rice cauliflower and unsweetened almond milk to saucepan and let simmer (once simmering lower heat and let cook for ~7mins, stirring throughout)
  • After about 7 minutes cauliflower should be nice and soft – turn off heat
  • Add flax meal and/or chia seeds and protein powder and stir together until well combined (should be a thick mixture) 
  • Once cooled, transfer to a mason jar or your fav bowl and top with your favorite toppings such as wild blueberries and sliced almonds
